False- color images of anything astronomical are made to help clarify regions of different elements.
These images may be superimposed with infrared and ultraviolet imaging to further illustrate what's happening temperature- wise.

He's right. The false color shows us the wavelengths that we cannot otherwise see with our own eyes (because they are not in the visible spectrum.) All kinds of electromagnetic radiation can be given off or absorbed and these different wavelengths and frequencies tell about the composition (which elements are there) and also the temperatures. From the wavelengths we can also deduce the motion of the supernova towards us or away from us by the Doppler shift.
